Sean’s Killer Tomato Sauce

Hi Guys n Gals,

This is a great multipurpose sauce I often make. You can use it as the base of lasagne or a pizza base, a classic italian pomodor, a sauce for steak, for Chilli con carne, spag bol and hundreds of other recipes.

I make this in bulk and freeze portions or you can keep it in the fridge for up to a week. It’s very easy to make, very cheap, compared to ready made sauces with loads of “additional ingredients” and very very tasty!!


4 x 400 g tins of good quality chopped tomatoes
2 medium onions finely chopped
1 large handful of basil roughly torn (not chopped)
2 cloves of garlic pressed
2 fresh Bay leaves
1 VERY generous glug of good quality extra-virgin olive oil
half a tube of good quality tomato purée

One large thick bottomed good quality pot ( le crueset for example )


Throw a generous glug of olive oil into pan on a medium heat. Add the chopped onions and garlic, stir to coat onions and add lid. Sweat onions on lowest heat for 15 min, onions should be translucent in appearance.

Next, add the tins of tomatoes and tomato purée, bay leaf and basil.

Season with sea salt and freshly ground black pepper, stir well, reduce heat to a slow simmer and cook for five hours, stirring every 20 to 30 min to avoid it burning and sticking the the bottom of the pan.

You can also add a 500 mls extra virgin olive oil ( if its real good stuff ) and/or blend it if you prefer smooth sauce!!!

Et Voila you will have a great sauce !!!
